Peanut Butter, Cacao and Coconut Crunch Balls

Since buying cacao powder, I’ve been trying to put it into everything I eat because I need my chocolate fix! Recently, I’ve seen these energy balls trending on the internet and thought why not create my own to snack on. So I came up with these Peanut Butter, Cacao and Coconut Crunch balls. I think the first time I made it, I almost ate it all in one sitting (hangs head in shame) because it was so moreish.

Peanut Butter, Cacao and Coconut Crunch balls (makes 12) (approx. 120 calories per ball)

75g porridge oats

100g peanut butter

40g desiccated coconut (4tbsp extra to coat – optional)

25g cacao powder

5 tbsp agave nectar

Method:

  1. Add all dry ingredients together and mix well.
  2. Add in the wet ingredients and mix thoroughly until the mixtures starts to pull away from the side of the bowl.
  3. Roll into balls of desired size and coat in desiccated coconut.
  4. Leave to chill in the fridge for an hour before eating.

I’m super excited to take these to work to keep me going in between meals as I normally end up snacking on chocolate or biscuits that are freely available in the staffroom. Even though they seem quite high in calories, they are filling (I’d probably have two) and it tastes enough like chocolate to keep your cravings at bay.
